Vegan Beet Soup w/CocoYo

8 oz | GT's COCOYO Ginger Turmeric |
8 oz | Veggie Broth |
2 Large | Beets (Chopped) |
2 Large | Carrots (Chopped) |
4 | Garlic Cloves (Diced) |
2 Tbsp | Olive Oil |
1 Tbsp | Fresh Dill (For Garnish) |
Directions
Sautee diced garlic with olive oil in saucepan over medium heat. Add chopped beets, carrots, GT’s COCOYO Ginger Turmeric, and broth. Simmer until beets and carrots are tender. Cool to room temperature, then use blender/food processor and blend to desired consistency. Reheat or serve chilled. Garnish with scoop of GT’s COCOYO Ginger Turmeric and fresh dill. Enjoy!
